EWC Community Education offers Cajun Cuisine class with EWC President, Dr. Lesley Travers

The Community Education office at Eastern Wyoming College in Torrington is offering Going Cajun with the Prez. This class will be held on Tuesday, January 23 from 6-8:00 pm and cost $25.
EWC President, Dr. Lesley Travers will start this class with a great roux, add in the trinity and throw in some protein for a great tasting Gumbo.
Gumbo is a Creole adaptation of the African word for okra, which is used as a thickener. There are more variations of Gumbo than there are types of cars. Everyone in the South has their own version which why Gumbo is so beautiful. It is very versatile and is a meal in itself. The most difficult part of making Gumbo is the roux.
Roux takes time and patience and in this class we will learn how to make a brown roux. You will also learn about File, which is a fine powder of young dried sassafras leaves and is used to flavor and thicken Gumbo.
And last, but certainly not least …..Mississippi Mud Pie. This is a brownie-like cake with marshmallow crème and chocolate icing which is topped with nuts.
